Liz in coldest Norway needs a recipe for Chocolate Cherry Cheesecake, almost harder to write out than for me to make as I don’t have recipes, might be time to correct that. For now this is a rough idea of what’s in and how to put it together :
Base – 250gms digestive biscuits crushed
Melted butter or mix of butter and margarine
Line a cake pan, mine is 25cm diameter x 6 cm deep with greaseproof paper, press in the biscuit mix, put in fridge too cool.
Filling (all weights approximate!) –
250 gms soft cream cheese (unsalted & unsweetened)
250 gms rich thick Greek Yoghurt
250 gms sugar
200 mls whipping cream lightly whipped
150 gms dark chocolate melted
4 sheets gelatine melted
few drops vanilla
Beat together cheese, yoghurt & sugar until sugar is dissolved, check flavour all the way along
Beat in vanilla and melted gelatine, then the chocolate, taste, adjust if necessary for extra sugar or chocolate, then fold/stir in the cream
Pour into the pan and leave in fridge to set, overnight is good. When set remove from pan and then put the topping on.
For the topping either clean, stone and cook lots of fresh cherries or use a tin of cherry pie filling, also works well with apricot topping or without any topping
